Why do you want to program/burn your IC using MATLAB? Because the only way for interfacing any IC with PC is UART and when there are already tools/softwares available for the same purpose then why do you want to use MATLAB? Do you want to establish serial communication using MATLAB with your IC? If yes that can be done easily. But for programming and burning an IC, MATLAB doesn't come by default with any such integration tools.
Please tell us what do you exactly want to do using MATLAB? Perhaps then everyone here would be able to give some suggestions.
Your approach is good (MATLAB & IC) and interesting.
Keep up the good work
